So in my advanced foods class (I’ve never taken any foods classes before, this was the only class open) we have to make a catering menu. We need to create food that are along the line of shrimp creole. What meals, flavors, deserts would be good for this? It’s for a bunch of teachers. I just don’t know what that is, the flavors and stuff, and what goes together well. Please any help. Any specific recipes would be great too! Thanks in advance!

    Shrimp creole
    1 tablespoon vegetable oil
    1 medium onion, chopped
    1 dash cayenne pepper
    1 pinch thyme leaves, crumbled
    2 bay leaves
6 to 8 green onions, chopped
1 can (14.5 ounces) tomatoes, undrained
    1 cup chopped celery
3 ounces tomato paste (about 6 tablespoons)
1 green bell pepper, thinly sliced
    3 pounds medium shrimp, peeled
    2 cloves garlic, chopped
    hot, cooked rice
    Preparation:
Heat oil in a heavy skillet; sauté onions, celery, bell pepper, garlic, thyme, cayenne pepper and bay leaves for a few minutes, or until vegetables are just tender. Add tomatoes and tomato paste; simmer 15 minutes. Add peeled raw shrimp; simmer 10 minutes. Serve over hot rice.
    Serves 6 to 8.
you can go southern for anything in this meal
peach cobbler for dessert and such.
it’s slightly spicy so serve accordingly

Google “Cajun food caterers” check out their on line menus.
Pick out something that will work for you. If you can’t figure out a way to make the dish try to Google the recipe. There are several resources to choose from. You can enhance them with your own taste and call them your own.

jambalaya, gumbo, beignets(for dessert), okra and tomatoes, pretty much anything with the word creole in it or cajun will go with it.
