What’s your favorite Cajun/Creole recipe?

I hate that the Gulf coastal region (LA, especially) is experiencing such a disaster. There are so many great foods indigenous to the area that will be seriously missed or affected: Pompano, red fish, crayfish, shrimp, oysters, etc. In honor of them, what’s your favorite recipe?
Some actual recipes would be nice!

What’s a good New Orleans cajun dish?

My Son is having a cultural food fair on Friday. His teacher has requested a dish that represents the family’s cultural
background. I’m from Louisiana and would like to make something easy that 2nd graders might be willing to sample. Any recipes or suggestions?

I’d say Soul food because I grew up on it. I also love Mexican, French, and Lousiana Creole food.
