This is just the Gravy part, part one covers the Cajun Turkey that gave these drippings. Normally we use the broth for our stuffing to make it Cajun style too. We only use the fat for the roux and add chicken stock or water for the gravy. If you use the broth for your gravy, it WILL increase the heat level many fold&#8230;</p>

I ussually get about a 15 lb bird.<br />
I am feeding about 6 people but we like to have ALOT leftover.<br />
But i want to try a new flavor this year.<br />
I ussually dust it with cajun seasoning, soul food seasoning and a little garlic pepper-or lemon pepper.<br />
And poultry seasoning. Butter the skin ,and under the skin,everywhere.<br />
Sounds like too much but it was delicious.<br />
but whats something new i can try.<br />
the whole&#8211;pineapple and cherry thing is a no go.<br />
Hubby dont like it.<br />
I smoke it- not bake it.</p>
<p>In my father in laws homemade smoker.<br />
We let it cook for about a day.</p>
<p>SOOOOOOOO tender and juicy and delicious.</p>
<p>So..</p>
<p>How do yall make yours.<br />
???<br />
yea we are in alabama so i understand about the south and spicy..<br />
I gotta have my spicy meat.<br />
Hmm..<br />
I have never tried the injecting thing actually..<br />
what kinna stuff to inject?</p>
