Sweet Potato Pone

This is an easy recipe for Sweet Potato Pone (aka Potato Pound)! This dish is one of the original “soul foods” that arrived via the slave ships that came to America.

Some suggest serving Sweet Potato Pone as a side dish with meats, but to others it is a dessert or pudding. You decide – either way, it is yummy! :)

Sweet Potato Pone

Sweet Potato Pone

Ingredients
1 egg
1 cup sugar
1 stick (8 tablespoons) butter or margarine, softened
2 cups grated raw sweet potatoes
¼ teaspoon salt
½ cup milk

Directions
Preheat the oven to 325 degrees. Beat the egg with the sugar and butter in a mixing bowl until creamy and smooth. In another bowl, combine the sweet potatoes, salt and milk and mix well. Add the butter mixture to the potato mixture and mix well. Pour the mixture into lightly buttered baking dish and bake for 30 to 35 minutes. Remove from the oven and sprinkle the top with the pecans. Return to the oven and bake for 30 minutes, or until the mixture sets slightly. Serves 6 to 8.

Sweet Dinner Surprise

This is a Cajun meal that isn’t your average spicy Cajun food, and can be either a desert, a sweet appetizer, or even a main course meal. I suggest serving this as an add-on to a main course meal. While looking like a dessert, it can go well with any meal. It’s kind of like serving jello in your main course meal. This is the same kind of food, but better.

Ingredients

1 (3 Ounce) Box of Pistachio Pudding

1 large Jar of Pudding

3 Cups of Orange Juice

2 Cups of Mini Marshmallows

4 Strawberries

8 Ounces of Cool Whip

1 Medium Can of Crushed Pineapple

1 Cup of Peacons

Directions

Mix your pudding and pineapple with the orange juice. Then, after that, simply mix your other ingredients in this mixture, and your Sweet Dinner Surprise is complete!
