Christmas Traditions In The New Orleans Creole??? Please Help!?

Okay. I’m trying to do a report on Christmas Traditions in the New Orleans Creole. I’ve gotten VERY little information. I need enough to write a 1-2 page report, have an activity to engage a class in and have a food (which should be easy Cajun)
but I need help. Any info on the Christmas Traditions?
Present time and past…past is especially needed for any traditions that may have changed.

So in my advanced foods class (I’ve never taken any foods classes before, this was the only class open) we have to make a catering menu. We need to create food that are along the line of shrimp creole. What meals, flavors, deserts would be good for this? It’s for a bunch of teachers. I just don’t know what that is, the flavors and stuff, and what goes together well. Please any help. Any specific recipes would be great too! Thanks in advance!

resident, i want to hear from the other 48 states, give me your recipe for a good chicken and sausage gumbo? do the other 48 states have crawfish boils? do any of the other 48 eat boiled pigfeet? how about hog cracklin? (which is fried hog fat and allowed to cool to become a nice crunchy treat) i think louisiana has the best food in the world, i would love to hear your recipes (not louisiana and texas residents please) of a chicken and sausage gumbo
