What’s a good New Orleans cajun dish?

My Son is having a cultural food fair on Friday. His teacher has requested a dish that represents the family’s cultural
background. I’m from Louisiana and would like to make something easy that 2nd graders might be willing to sample. Any recipes or suggestions?

With the Super Bowl just around the corner, I started thinking about how different these two cities are.
I associate New Orleans with jazz music, streetcars, Cajun food, etc and Indy with the 500, Letterman, cold weather, etc.

What is it, I love a roast beef po boy with french bread that’s flaky and crunchy on the outside and soft on the inside with hot roast beef, gravy, cheese, dressed! I also love Shrimp creole
