Peanut Butter and Bacon…What are some creative ways to incorporate these two ingredients into a recipe?

Now first off, I don’t wanna hear any LIP from all you Naysayers who might immediately think and say, “Peanut Butter…and BACON!!? EEEEEWWWWW!!!” If you’ve never tried these two together, you have no idea what you are missing. This is a great Southern tradition and even the master chef, Paul Pruhdomme, in his famous K-Paul’s Kitchen in New Orleans incorporates a peanut butter and bacon hor’dourve in his menu for private parties, so no, I’m not making this up or am I playing with food, thank you. Cajun cooks can appreciate what I’m talking about.
Now I have a family member who is an absolute junkie for bacon, even though it’s not the best for you, health wise. She alway prepaes bacon in the morning and there is usually some left over, so my typical habit is to incorporate it into a peanut butter and bacon sandwich, although I also add mayonaisse and onions which really brings out the flavors. Don’t knock it til you try it, Bubba! It is DEE-LISH!
But other recipe ideas?
Of course, I (and anyone else with internet) can just Google “peanut butter and bacon” and come up with recipes. But I prefer recipes that the person has actually tried and knows is a proven winner or a crowd pleaser.
I like Thai food with peanut butter, coconut milk and curry. I also like Italian Fettuccinni Carbonara with bacon in a cream sauce. But I’ve not found too many quick and easy recipes for peanut butter and bacon together besides a sandwich or something on a cracker.
I do a lot of cooking so ease of preparation is not my sole criteria. I prepare many elaborate meals too. I’m just looking for new ideas that bring out these two flavors that I might share with others and not be accused of making up some crazy dish that’s never been tested. So if the recipe has a name and a history, that adds to the credibility if I serve it to others. Get it?

Shrimp wrapped in bacon and you can make a spicy peanut butter sauce to dip the bacon wrapped shrimp in to.

I havent tried it But Ive seen waffles stuffed with bacon and with peanut butter (two seperate dishes, that is)

Chicken Satay with Peanut Butter Sauce
For Kabobs:
3 tbsp. soy sauce
2 tbsp. oil
½ tsp. curry powder
1 clove garlic, minced
1 lb. boneless, skinless chicken breasts, cut into 1 inch cubes
Bacon
Sauce ingredients:
1 tsp. oil
¼ cup sliced green onions
½ tsp. ground ginger
¼ to ½ tsp. red pepper flakes
½ cup peanut butter
1 cup water
1 tbsp. soy sauce
1. For chicken kabobs, combine 3 tablespoons soy sauce, 2 tablespoons oil, curry powder, garlic, and chicken breasts. Cover and marinate by refrigerating 2 hours or overnight.
2. Wrap bacon around chicken and thread chicken onto wet bamboo skewers. Broil 6 inches from heat, turning and basting with remaining marinade, about 5 minutes or until done. Makes 4 servings of kabobs.
3. While chicken is broiling, make the peanut sauce by heating 1 teaspoon oil over medium heat; add green onions and red pepper flakes. Cook 1 minute.
4. Stirring constantly, add peanut butter to green onion and pepper mixture. Gradually stir in water and soy sauce until well blended. Add ginger. Bring to a boil until mixture thickens. Serve hot or at room temperature with chicken kabobs. Makes 1 ½ cups of sauce

funny you should ask this, because a member of a training class I’m in just listed his favorite dish as pancakes with bacon incorporated and smeared with peanut butter. I was thinking waffles with bacon incorporated and topped with peanut butter and honey or real maple syrup. I’m a breakfast person.

Try mixing the peanut butter and bacon and putting it on pancakes or waffles; I bet it would be good with syrup!
Spread it on apple slices.
Stuff celery sticks with it, maybe add raisins or cut up dried fruit??
I would try adding lettuce to that sandwich, maybe put it in a pita… or even add sprouts…

Since you asked, I love peanut butter and bacon on cold pizza. Like you, I know that it sound horrible but it is awesome. I use any cold leftover pizza (except pepperoni), put peanut butter on top and sprinkle bacon bits on it. I love it with thin crust pizza, however, and crust will do. On the other hand, I have never tried to make a pizza with peanut butter on top but that is an idea.
