I love pastalaya (jambalaya made with pasta), but my girlfriend can’t really do spicy foods. I made stir fry for us the other night with steak, shrimp, and chicken and she really liked it. So, I was wanting to make another three meat dish similar to pastalaya, but without the cajun kick. Does anyone have any suggestions? I will probably be using linguine as my pasta. Thanks.

Get some tomatoes and cook them down with butter in a sauce pan. The tomatoes reduce to almost nothing and it creates a really good “sauce” (not like spaghetti sauce, much lighter). You could cut the meat up and cook it in a separate pan (I would add a little bit of garlic, but that’s because my boyfriend’s a garlic junkie!!) then add it to the tomato mixture and simmer it all together for a bit. Then spoon it over the pasta.
I do this with just shrimp. I think it would be good with the other meats added too.
Another tip is to peel and de-seed the tomatoes first. I know it’s a pain, but the sauce comes out smooth that way.

What a cool and interesting idea and question. I had to think about it because of the steak part but how about grilled with you making a lemon, garlic, butter, olive oil parsley and red pepper flakes with some chicken stock added for more juice. Maybe thicken it up a bit with a slurry (water and corn starch mixture. Just a little though. Oil all the grilled items before grilling them as not to stick. You can even marinate the three in the lemon, oil mixture. Sorry it is so long but it is coming to me as I write. Chastity’s reply looks good also. I too am a garlic fanatic. I need to add this combo to my ideas when I have a little bit of everything left over or in freezer. Thank YOU!

Each of the proteins requires a different cooking time; start them separately.
Boil the pasta for about 8 minutes, when everything else is ready.
The sauce will be the biggest challenge, depending on desired ‘heat’.
Use a commercial spaghetti sauce, adjusted with onions & peppers.
Then drain & serve the pasta, coat with sauce, & add the meats.
