I had some homemade canned Cajun mayonnaise separate before opening. I opened it,stirred it,?

it looks like greasy cottage cheese, it smells OK. Should I just give it the old heave ho or put it in the food processer and try to re process it? My husband bought it at a farm stand in an orginal sealed container.

    put it in the fridge for a while and toss it into the processor :)

    I would try to blend it more in a food processor to see if it can get back to the right mayonnaise consistency. As long as it has been sealed and stored properly, it should be okay. However, since it does contain eggs, I would test just a little bit at a time before using it regularly.

    I always say…”when in doubt, throw it out”

    I wouldn’t take the chance …just in case. Homemade mayonnaise should be covered and refrigerated for no more than 1 week. so if its been longer I would especially toss it.

    Most probably it was exposed to excess heat while on the farm stand! MY suggestion, if it has fresh eggs in it, please save your health and throw it away.

    Ewww, I wouldn’t eat mayo that is homemade froma farm stand! Jelly is one thing, but mayo? no way! Give it the heave-ho!

    it broke… if it has been in the refrigerator and well kept it should be safe, but if you got it at a farm stand and it came like that, dont risk it and toss it… homemade mayo contains raw eggs and is a risk for salmonella – otherwise, to fix a broken mayo, just take a couple of egg yolks and whip with a hand whisk, then incorporate the broken mayo little by little as you whisk, this should bring it back, dont use processor
