How do you make your turkey (toppings-seasonings)?

i am looking for a new flavor for my turkey this year.
I ussually get about a 15 lb bird.
I am feeding about 6 people but we like to have ALOT leftover.
But i want to try a new flavor this year.
I ussually dust it with cajun seasoning, soul food seasoning and a little garlic pepper-or lemon pepper.
And poultry seasoning. Butter the skin ,and under the skin,everywhere.
Sounds like too much but it was delicious.
but whats something new i can try.
the whole–pineapple and cherry thing is a no go.
Hubby dont like it.
I smoke it- not bake it.

In my father in laws homemade smoker.
We let it cook for about a day.

SOOOOOOOO tender and juicy and delicious.

So..

How do yall make yours.

yea we are in alabama so i understand about the south and spicy..
I gotta have my spicy meat.
Hmm..
I have never tried the injecting thing actually..
what kinna stuff to inject?

    I have baked it in an oven, on a Charcoal grill and in a turkey fryer.
    In the oven we would stuff it with our favorite stuffing and make a butter oregano mix to spread over the top.
    On the grill pretty much the same thing.
    In the fryer I would use an injector to to put spices into the bird in different areas of the turkey. Let that sit over night and them put in the fryer. The fryer is my favorite way to cook my turkeys and whole chickens.

    cajun it has the injector …we do all things cajun in the south.HOt is the only way to have it.

    My husband preps the bird while I do everything else.
    But I think he only uses oil, s&p and he covers it in the roaster.
    It took him 4 hours one year.
