<strong>Ingredients</strong><br />
2 medium bananas, peeled and coarsely chopped<br />
1 cup all-purpose flour<br />
1 egg<br />
1/4 teaspoon salt<br />
2 teaspoons baking powder<br />
1/2 cup milk (about)<br />
3 cups vegetable oil<br />
Confectioners sugar<br />
Ground cinnamon</p>
<p><strong>Directions</strong><br />
Combine the bananas, flour, egg, salt, and baking powder in a mixing bowl. Add enough milk to make a batter the consistency of a thick pancake batter. Heat the oil in a deep, heavy pot or deep fryer to 360º F. Drop the batter by spoonfuls into the hot oil and fry until the fritters pop up in the oil and are golden brown.</p>
<p>Drain on paper towels and sprinkle with confectioners sugar and cinnamon. Or serve with with vanilla ice cream and <a href="http://cajunmeal.com/cinnamon-sauce.html">Cinnamon Sauce</a>. Yummy!</p>
<p>Yield: Makes about 20.</p>

<strong>Ingredients</strong><br />
2 cups water<br />
2 tablespoons ground cinnamon<br />
3 egg yolks, lightly beaten<br />
2/3 cup sugar<br />
2 tablespoons cornstarch<br />
1 cup butter (2 sticks) </p>
<p><strong>Directions</strong><br />
Heat water and cinnamon in a medium saucepan.<br />
In a separate bowl, mix the egg yolks with sugar and cornstarch. Add about one-third of the hot mixture to the egg yolk mixture slowly, then pour back into the saucepan, stirring to blend. Return sauce to a boil. Remove from heat and cool the sauce for 2 minutes. Slowly whisk or beat in the butter.</p>
<p>Store cinnamon sauce in refrigerator. </p>

			<content:encoded><![CDATA[<p>Everyone loves gingerbread, I know I do! This is a great traditional and easy gingerbread recipe that will add to any party.</p>

2 sticks butter, at room temperature<br />
1 cup sugar<br />
1 egg<br />
1 cup molasses<br />
2 1/2 cups bleached all-purpose flour<br />
1 1/2 teaspoons baking soda<br />
1/2 teaspoon salt<br />
1 teaspoon ground cinnamon<br />
1 teaspoon ground ginger<br />
1 cup hot water</p>
<p><strong>Directions</strong><br />
Preheat the oven to 350 degrees. Beat the butter at medium speed with an electric mixer. Gradually add the sugar, beating well. Add the egg and molasses, mixing well. In another bowl, combine the flour, baking soda, salt, cinnamon and ginger. Add to the creamed mixture, alternately with the water, beginning and ending with the flour mixture. Mix well after each addition. Pour the batter into a lightly greased and floured 13-x9-x-2-inch baking pan. Bake until a wooden pick inserted in the center comes out clean, 35 to 40 minutes. Remove and let cool before slicing to serve. Or, let cool completely, wrap first in plastic wrap, then in foil and put into a freezer storage bag before putting it in the freezer. When ready to serve, remove from the freezer, unwrap and let come to room temperature. Then wrap in foil and bake at 250 degrees until warm through. Slice to serve. Makes about 15 servings.</p>

1 egg<br />

1 stick (8 tablespoons) butter or margarine, softened<br />
2 cups grated raw sweet potatoes<br />
¼ teaspoon salt<br />
½ cup milk</p>
<p><strong>Directions</strong><br />
Preheat the oven to 325 degrees. Beat the egg with the sugar and butter in a mixing bowl until creamy and smooth. In another bowl, combine the sweet potatoes, salt and milk and mix well. Add the butter mixture to the potato mixture and mix well. Pour the mixture into lightly buttered baking dish and bake for 30 to 35 minutes. Remove from the oven and sprinkle the top with the pecans. Return to the oven and bake for 30 minutes, or until the mixture sets slightly. Serves 6 to 8.</p>

While not much different from your every day cookie cake you can buy at your local Jewel Osco, this has much more of a homemade taste to it, as well as that splash of Cajun taste to it.</p>
<p><b>Ingredients</b></p>
<p>4 Eggs</p>
<p>1 Box of Yellow Cake Mix</p>
<p>8 Ounces of Cream Cheese</p>
<p>3/4 Stick of Butter</p>
<p>1 Box of Confection Sugar</p>
<p><b>Directions</b></p>
<p>Melt your butter in a bowl. Once melted, mix in your cake mix, as well as one of your eggs, until the mixture forms into dough. Now add your last 3 eggs, cream cheese, and sugar. Stir it together well, or just stir it in an electric mixer. Then, bake it at 350 degrees for 45 minutes, and you are in for a treat.</p>
