Creole salmon cakes with bell pepper relish and spicy mayo

Salmon is healthy and packed with Omega 3′s and that is a big part of this recipe. Here is a light and health recipe that is baked and not fried. Depending on the size you form your cakes you can serve them as an appetizer or for larger cakes and entrée with a side salad. The key is not to use a lot of breading for the cakes.
